Easy Snack
- 750ml ( 3 cups) cooked pumpkin or butternut, mashed.
- 3 eggs whisked
- 80ml (1/3 cup) self-raising flour.
- salt and freshly ground black pepper.
- oil for frying
- cinnamon to serve.
- Mix the butternut/pumpkin, eggs, flour, salt and pepper in a mixing bowl.
- Heat the oil in a deep pan and drop spoonfuls of the mixture into the oil.
- Fry until golden brown and drain on paper towels.
- Sprinkle with cinnamon and enjoy.
Easy Snack
Vegetable
SkewersFry potato slices until crisp. Halve baby marrows lengthwise and slice mushrooms. Fry until just done
and season with salt, pepper and herbs. Thread onto skewers and serve with your favourite dip.
Lightly fried baby tomatoes can also be added as well as green and red peppers.
Easy Snack
Cheesy
JalapenosHalve bottled jalapenos, put a small amount of mayonnaise in each half and dust with paprika.
Sprinkle grated cheese on top. Place on a greased baking tray and grill until cheese has melted.
