Mini Pumpkin Fritters


  • 750ml ( 3 cups) cooked pumpkin or butternut, mashed. 
  • 3 eggs whisked
  • 80ml (1/3 cup) self-raising flour.
  • salt and freshly ground black pepper.
  • oil for frying
  • cinnamon to serve.

  1. Mix the butternut/pumpkin, eggs, flour, salt and pepper in a mixing bowl.
  2. Heat the oil in a deep pan and drop spoonfuls of the mixture into the oil.
  3. Fry until golden brown and drain on paper towels.
  4. Sprinkle with cinnamon and enjoy.
