Pumpkin Fritters
- 750ml ( 3 cups) cooked pumpkin or butternut, mashed.
- 3 eggs whisked
- 80ml (1/3 cup) self-raising flour.
- salt and freshly ground black pepper.
- oil for frying
- cinnamon to serve.
- Mix the butternut/pumpkin, eggs, flour, salt and pepper in a mixing bowl.
- Heat the oil in a deep pan and drop spoonfuls of the mixture into the oil.
- Fry until golden brown and drain on paper towels.
- Sprinkle with cinnamon and enjoy.
